Elderflower & mint iced tea

Cool mint, fragrant elderflower and a squeeze of summer. This alcohol-free take on Hugo is easy to make ahead when people are coming over.

Elderflower and mint iced tea with lime and ice cubes

This is what I make on warm afternoons when I want something a little more interesting than water. Familiar peppermint tea, elderflower, lime and plenty of ice — all the freshness of a Hugo, without the alcohol.

A jug for the table

Make a big jug ahead of time and bring it out for a family meal or an afternoon in the garden with friends. For a less sweet version, use a little less syrup and add a splash of sparkling water.

Ingredients

  • 1 l water
  • 5 peppermint tea bags
  • 200 ml elderflower syrup
  • 2 organic limes
  • 4 sprigs of fresh mint
  • Ice cubes

Method

    • 1 l water
    • 5 peppermint tea bags

    Bring the water to the boil and pour it into a heatproof jug. Add the tea bags and leave the peppermint tea to steep for about eight minutes.

  1. Remove the tea bags and let the tea cool completely. Refrigerate until ready to serve.

    • 2 organic limes

    Wash the limes in hot water, dry them and cut into thin slices or small wedges.

    • 200 ml elderflower syrup

    Stir the elderflower syrup into the cold peppermint tea. Depending on how sweet your syrup is, start with a little less and adjust to taste.

    • 4 sprigs of fresh mint
    • Ice cubes

    Divide the ice cubes and lime between four glasses. Pour in the iced tea and garnish each glass with fresh mint.

The finishing touches

Add the ice and lime to the glasses just before pouring. Keep the mint for the final garnish, so everything arrives at the table cold and fresh.
